Warm, fresh figs – their jamminess enhanced with a sticky cinnamon and orange glaze – smothered in creamy yogurt. This is a bit of a cheat post as it’s not really a recipe but I thought I would share my latest breakfast obsession. It’s simple but indulgent and makes a delicious snack or pudding any time of the day.
Ingredients (serves 2)
Juice 1-2 oranges
½ teaspoon coconut oil
1-2 teaspoons cinnamon powder
Preheat the oven on 180 (fan)/200 (conventional)
- Pop the coconut oil into a baking dish and melt for a few minutes in the oven.
- Remove the figs’ stalks and quarter or slice each fruit.
- Put them into the baking tray, pour over the orange juice, sprinkle with cinnamon and mix lightly in with the melted coconut oil.
- Bake for about 15-20 minutes and serve warm or cold.
