I think the secret to making vegetable juice taste good is
to make sure it has plenty of lime or lemon with it and also ginger. Plus, both
of these ingredients have a certain zing to them – quite welcome on a bad head
day. The scariest ingredient is the blood-cleansing raw beetroot, but its
earthiness is neutralised by the sweetness of the apple as well as the ginger and lime. The
carrots add a subtle sweetness and the celery is good for cleansing. Try not to
be put off by the number of vegetables in the list below – the apple and the
citrus fruit counteract them – and the health benefits are enough to
make you feel relatively smug on the morning after the night before.

Ingredients (serves 1)
1 stick of celery
1 large apple
Ginger – 1 cm (plus) chunk
1 lime or lemon
Sparkling water (optional)
Simply juice the first 5 ingredients and mint if using (I always do if I have any hanging out in the fridge/surviving outside).
Squeeze the lime or lemon, pour into a glass with the ice cubes, add juice and sparkling water – if using – stir and feel chuffed that you are on your way to getting over that hangover without a complete carb-fest.
